An Australian with tour Group April 2020. What money do I need for incidentals, souvenirs in Zimbabwe & Botswana? Will US dollars cover this?

USD is best

Yes, you need to bring US$ with you. Incidentals can be paid for with USD cash and then use your credit card for major purchases.
